2. Cipollini onions

This Italian vegetable literally means little onions, but these little guys are full of great flavor. Chippolini onions are a smaller, flatter and paler version of the regular onion. They are also sweeter, making them ideal for roasting.

Cipollini onions become incredibly caramelized and tender when sauteed in balsamic vinegar or butter. They don’t have the strong, pungent flavor of their American cousins.
