Can also be used for soaking! You can’t have a real Mexican meal without chips and gravy. I like to offer a full range of baked beans, guacamole and salsa.

Speaking of beans: Black bean salad is another great side dish to serve with quesadillas. This gives a nice balance between the sweet and spicy flavors of the quesadilla. Add sliced mango, cilantro and lime juice for a quick and refreshing side dish.

This is another refreshing dish to balance out the rich, meaty quesadilla. A bowl of coleslaw is good, but it’s even better when you add a little Mexican flavor. So try replacing the cabbage with jicama, cucumber and grated raw beets.

8. Chicken Tortilla Soup

You have tortilla bread anyway, so why not make tortilla soup? Only a few ingredients are needed: Chicken breast, corn, tomato sauce, onions, garlic, jalapenos, green peppers, cumin, chili powder, cayenne pepper, white wine, chicken broth, tomatoes and fried tortilla chips. Well, I may have overdone the phrase a bit with a few ingredients, but hey, these are all basic products you’ll find in your pantry!

Saute the vegetables, onions, garlic, jalapenos and green chilies. Then add the rest of the ingredients and wait for it to boil. Add the shredded chicken, simmer for a few more minutes, and you’re done! Serve in a bowl and top with baked tortilla.

9. Pork and Poblano Soup

Poblano peppers are best roasted to bring out their delicious fruity flavor. Then combine it with pork tenderloin, salsa verde, cilantro and cumin for an irresistible soup that goes great with quesadillas.

10. Mexico Street Corn

A Mexican party is not a party without the famous street corn! Elote is a delicious dish that gives me an excuse to fire up the grill.

Preheat the grill to medium-high heat. Grill the corn cob for about 10 minutes (or until slightly charred). Turn frequently during cooking.

Spread a layer of mayonnaise on the corn. Then sprinkle with chili powder, cotija and coriander. Serve with plenty of napkins. Disgusting!

You want corn, but you’re not a fan of elote? No problem, just make a nice charred corn salad. To prepare, grill the corn kernels to get a nice smoky flavor. Combine with avocado slices, red onions and Fresno peppers. Topped with a creamy sauce of sliced tomatoes and cojita cheese.

If you want to spice up your quesadillas, add pickled jalapenos. Don’t worry, pickling the peppers will reduce the spiciness. If you want to make the taste even sweeter, you can add a little honey during pickling.

No Mexican feast is complete without guacamole! To prepare, mix the avocado, lime juice, cilantro, red onion and jalapenos. Mix until the mixture is smooth. Season with salt and pepper and you’re done!
