I love making this tea during the winter months.

Ginger and cinnamon are soothing, and we all know that ginger is good for our immune system.

I especially like to use fresh ginger root to give it a spicy note.

7. Head sofrito

Sofrito is the secret of many Caribbean dishes.

Mix garlic, onions, peppers, tomatoes, cilantro and parsley and store in an airtight jar.

It can be used in everything from stews and soups to rice and beans.

Once the meat is cooked, mash it with the garlic puree until well blended.

Then add the pork rinds and fillet them as well.

25. Jamaican brown fish stew

In this recipe, brown fish does not mean brown fish.

Instead, the fish is fried and then simmered in a sauce with lots of herbs and spices.

Brown sauce is used to make the sauce darker, and you can easily make it yourself if you can’t find it at the store.

Like many Jamaican recipes, this dish contains a scotch pepper for spice, which you can leave out if you don’t want it spicy.

26. Papas Rellenas portoricana (stuffed potatoes)

If you’re looking for a side dish or snack that’s more than chips and mozzarella sticks, these rellenos are for you.
